What to do with your leftover Pumpkin

What are you doing with your leftover pumpkin from Halloween? I plan to make a pie with mine. I will definitely be topping my pie with these amazing roasted pumpkin seeds that just came out of my oven. Oh yeah!

Roasted Pumpkin Seeds

2 cups pumpkin seeds
1/4 cup maple syrup
1 teaspoon ground cardamom spice
1 teaspoon ground nutmeg
1/2 teaspoon cinnamon

Bake in your oven for 30 min at 200. Be sure to keep mixing them every 5-10 minutes. Once baked, let your pumpkin seeds sit in your oven turned off for an additional 20 minutes.
