Summer Spotlight: Watermelon

The summertime fruit options seem endless and I love it! Nothing screams summer like watermelon. Not only is watermelon super hydrating and a great way to replenish your electrolytes but it also offers anti-inflammatory and antioxidant support.

Watermelon serves up these essential nutrients as well –

  • Vitamin A
  • Vitamin
  • Vitamin C
  • Vitamin B6
  • Potassium
  • Magnesium
  • Iron
  • Zinc

Refreshing and nutritious! Oh Yeah!

Here are some of my favourite ways to enjoy watermelon!

Watermelon Balls

  • You’ll need a melon baller.
  • Make sure your watermelon is ripe.
  • Cut your watermelon in half and use your melon baller to scoop out the watermelon (avoid the seeds).
  • Add to your favourite summer salad or skewer them with assorted fruits to make fruit kebabs – the kids love them!

Freeze Your Watermelon 

  • Make sure your watermelon is  seedless, ripe and fully coloured.
  • Cut your watermelon into small chunks and place on wax papered trays.
  • Place in freezer. You may have to do a couple of batches, depending on how big your watermelon is.
  • Once the watermelon is frozen, place in freezer bags and remove as much air as possible before sealing. Return to the freezer.

Great for smoothies all year long!

Watermelon Ice Cubes

  • Blend up your watermelon (add a squeeze of lime juice for some extra flavour).
  • Pour puree into ice cube trays and freeze.
  • Once frozen add to your glass of water for great flavour and extra nutrients.
