Nude Pad Thai

Nude Pad Thai, What is that? Ahhhhh Nude Pad Thai, one of my favorite dishes to make. Not only is this recipe all raw, but it is super quick to make and tastes unbelievable. I don’t use the word unbelievable lightly. If you take a look at all my recipes, I don’t think I have even said unbelievable before. You know what that means . . . you have to try it! Don’t wait any longer. Get the ingredients and enjoy!

Ingredients

Sauce
1 cup coconut milk – ideally this is from a Thai young coconut (Asian market will have one)
1 tblsp organic soy sauce – wheat free preferred, but not necessary
1 tsp ginger – grated
1 cup cashews
1 tsp jalapeno pepper – minced
1/2 cup almond butter
3 cloves garlic – finely chopped
3 tbls lemon juice
1/2 tsp cayenne
4 pitted dates – chopped

Noodles
2 medium zucchini

How to Prepare

Using a Spirooli device(see picture at right), using the large spiral cutter prepare the zucchini and set aside in a bowl. For the sauce, place all ingredients into a food processor and blend until well combined. Place your sauce over your zucchini, garnish and serve.

Garnish with hemp seeds, fresh yellow or red pepper and cherry tomatoes.
