Let’s talk about the power of sesame seeds! Often thought of as more of a garnish, these little white seeds are a powerhouse of nutrition. They are packed full of fibre, protein and lots of good fat. Not only do they add great texture and taste to a multitude of meals, they are also high in magnesium, iron and calcium to boot. My Sesame Seed Pesto is a flavour packed pesto that pairs well with pasta, rice or even as a spread on your favourite cracker. Oh Yeah!
Super Sesame Pesto
makes 2 cups (500 mL)
Ingredients
- 2 cups (500 mL) basil, chopped and packed down
- ¼ cup (60 mL) pecans, crushed
- 2 tbsp (30 mL) sesame seeds
- 1 tbsp (15 mL) tahini
- 1 clove garlic, minced
- 2 tbsp (30 mL) extra virgin olive oil
- ½ tsp (2 mL) lemon juice
- ¼ tsp (1 mL) Himalayan crystal salt
Directions
Place all the ingredients into a food processor and blend together until smooth.You may still have some sesame seeds not crushed, and that is okay. You may need to add more oil, so use your judgment. Serve over a bowl of gluten-free brown rice pasta or use as a nutty dip for vegetables.
Power of Food Tip: Replace 1 tbsp (15 mL) of the olive oil with 1 tbsp (15 mL) hemp oil or flax oil to increase the flavour and the omega-3 value of this pesto.
