Almond Butter Vegetable Dip

Throwing a holiday party? Sure there will be lots of goodies but it’s always nice to offer up a healthy option for those guests that may not want to over indulge.

Make my Almond Butter Vegetable Dip. This dip is the perfect partner for some freshly cut vegetables and is just as healthy as they are. So skip the ranch dressing and give your guests a delicious dip they can feel good about eating. Oh Yeah!

Ingredients – Makes 4 cups

2 tbsp almond butter
1 can organic chickpeas, rinsed
1 avocado, pitted
1/2 red pepper, seeded and chopped
1/4 cup sun-dried tomatoes, chopped
1 clove of garlic, minced
1/4 cup extra virgin olive oil
Juice from 1 lemon
1 tsp lemon rind
1/2 tsp Himalayan crystal salt
pinch of fresh ground black pepper

How To Prepare

Place all your ingredients into your food processor and blend until smooth. Serve with your favourite chopped vegetables such as carrots and cucumber. Store any leftovers in your refrigerator in an airtight glass container for up to 4 days.
