Family Friendly Quesadilla

Make dinner fun and delicious tonight!  This family friendly quesadilla recipe won’t make you feel guilty and it tastes so good. Enjoy this recipe for lunch or dinner, it doesn’t matter because the healthy ingredients will make you feel alive and energized when finished. The added bonus is that it is gluten free, so less trouble on your digestive system! Your kids will LOVE IT! 

Ingredients

½ onion diced
½ red pepper diced
½ cup spinach
2 cloves garlic, minced
2 brown rice wraps (gluten-free)
½ cup of organic cheese or vegan cheese
1 tbsp olive oil

How to Prepare

Place a tablespoon of olive oil and a tablespoon of water into a large pan and set stove top to low heat. Now place one brown rice wrap into the pan. Place all ingredients evenly throughout wrap and cover with lid. Let the wrap cook slowly for a few minutes or until toppings are a little steamed. Now place the second warp over top and bring stove top to medium. Flip after a few minutes. Once the ingredients reach desired consistency, cut into four wedges and serve with salsa & guacamole.
