Yam Quinoa Soup

Ingredients
  • 2 large yams - chopped & steamed soft
  • 4 cups quinoa - cooked
  • 3 stocks celery - chopped
  • 4 carrots - chopped
  • 1 cup hemp seeds
  • 5 dates - pitted & chopped
  • 1 onion - chopped
  • 2 cloves garlic - minced
  • 1 tsp ginger - grated
  • ½ tsp chilli powder
  • 1 tsp sea salt
  • 6 cups water
  • Garnish with chopped almonds
Instructions
  1. Steam your chopped yams until tender. Place all your ingredients into a blender except the quinoa. Blend until smooth. In a saucepan over medium heat, place enough soup based on the amount of people you are serving (2-3 cups per person is ideal). Add one cup of quinoa per serving to the pot and stir consistently until you reach your desired temperature.
  2. Garnish with some ground almonds
  3. Store any leftovers in your refrigerator for up to 4 days.
