Szechuan Green Beans

Serves: 4 cups
  • 15 green beans
  • ¼ cup coconut oil
  • 1 clove garlic, minced
  • 1 cup almonds, halved or whole
  • 1 cup onion, diced
  • 2 tablespoons maple syrup
  • 1 teaspoon ginger, grated
  • ¼ cup hemp seeds
  • ¼ cup sesame seeds
  1. Roast the almonds on the stovetop over medium heat until slightly brown.
  2. Add the coconut oil, garlic, ginger and onions and sauté for 3 minutes on medium heat.
  3. Mix in the green beans.
  4. Cover with a lid and let steam on low heat for 2 minutes.
  5. Now add the maple syrup, hemp seeds and sesame seeds
  6. If you want to add some heat to this dish, add in ¼ teaspoon of chili powder into the pan with the coconut oil. Not ideal for the kiddies, but great for mom and dad!
