With the never ending family dinners and friendly potlucks just days away, I wanted to share with you a few of my favourite Power of Food treats to help ensure you’re invited back.
These treats are ideal for a party or just stuff a bunch in a stocking as the perfect gift to get a smile and save a few bucks!
3 Sweet Holiday Treats from me to you
#1: Magic Macaroons (featured in The Power of Food book)
Ingredients: makes 12-16 macaroons
- 3 cups shredded coconut
- ½ cup coconut sugar
- 4 egg whites
- ½ tsp pure vanilla extract
- ¼ tsp Himalayan crystal salt
Preheat the oven to 350˚F. Line a baking sheet with waxed paper or parchment paper. In a large mixing bowl, mix together all the ingredients. Using your fingers, form the mixture into small teaspoon-size balls and place them onto the prepared baking sheet. Bake in the preheated oven for 15 minutes, or until golden brown. So easy and yummy! You can also add in ¼ cup cacao powder to make chocolate macaroons.
#2: Flourless Hemp Peanut Butter Cookies (also featured in The Power of Food book)
Ingredients: makes 8 cookies
- 1 cup of hemp seeds
- 1/4 cup raw cane sugar
- 2 organic eggs
- 1 cup all natural peanut butter
- 1/2 tsp baking soda
- 1/4 cup organic chocolate chips
Preheat the oven to 350˚F. Line a baking sheet with parchment paper. Mix together all ingredients in a large bowl. Spoon out small ball size portions and flatten onto the baking tray using a fork. Cook in the preheated over until golden brown, 15 minutes. So tasty and so nutritious, even the kids will love them!
#3: Guilt Free Chocolate Brittle – Boom, no fancier way to say it. Just do it!
Ingredients: Makes 8-12 pieces
- 1/4 cup hemp seed
- 1 cup cacao powder
- 1/3 cup coconut oil
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla powder
- 1/4 cup coconut sugar
- 1/4 cup almond pieces
- 1/4 cup dried cherries or goji berries
Blend all your ingredients except the almonds in a food processor until smooth. In a small mixing bowl add in your almonds. Using a fork, spread the mix as flat as you want on a piece of parchment paper over a large baking tray and garnish with more hemp seeds and almond pieces. Be sure to press the garnish down into the chocolate with a fork. Refrigerate the chocolate for 30 minutes then break it up and wrap them for the perfect holiday gift!
Why are hemp seeds in every recipe Adam?
Because they are the one food that helped me reverse my pre-diabetic state many years ago without needing to change my diet to get results. Just by adding 1 tablespoon of hemp seeds into everything I eat, my sugar stays in check and I have less food and sugar cravings. Try it over the holidays and see how it makes you feel.
